Cooking Good At Good Design; Sweet Potato Pie

Our Thanksgiving table would not be complete without sweet potato pie, but really,  this pie is delicious and healthy all year. It’s simple to make. The recipe came from Aretha Johnson and has been handed down in my family.

3 jewel yams 3 inches thick as long as from the tip of your index finger to the end of your palm

1/2 stick good sweet butter

1/2 Cup sugar

1/4 to 1/2 Cup whole milk room temperature

1/2 Teaspoon cinnamon

1/2 Teaspoon ground nutmeg

1 Teaspoon vanilla extract

1/4 Teaspoon ground clove

3 large eggs

Boil the potatoes til fork tender. Quickly peel while hot cut into pieces and  with the butter  put into a food processor or blender and blend well. Add  sugar milk and then eggs one at a time. Blending as you go..run machine til the mixture is silky and a bit shiny. It should pour like thick cake batter or med pancake batter. add all spices and vanilla and blend well.

Pour into a pre-baked pie shell and bake at 350 til it is done..Use a toothpick plunged into the center..when it comes out clean the pie is done. The potatos can also be baked in a buttered casserole without a crust.
